Last week...

Last week was a busy week. A busy week includes:
- finishing up a semester and lengthy papers
- hot weather
- trying to get family photos
- emotional breakdowns
- a birthday on graduation (with a piñata!)
- a first year anniversary on a birthday
- a house full of the people you love
- a mission call!
- driver's test, license, getting a car, registration and insurance
  all in the same day!

It was one of the best weeks ever this year! I miss my family and I can't wait to be with them for forever!

A night my family and I will never forget. The talks were so perfect for everything that's been happening these last few months and years!

I feel so blessed to have been able to complete a degree at BYU-Idaho and much more. When I first started here I used to say I was going to transfer to another school... and boy am I glad I didn't! It's been one of the best things that has happened to me. I've learned so much from the people I worked with and those that taught me. Every semester was full of tender mercies and miracles that made each one a little better than the last. I'm so glad we don't have to leave campus yet... I love it here. A huge thank you to everyone who helped me get to where I am today. Gracias!

D & I are both working on our internships this semester! It's been a super experience learning how to be in "the real world." It's similar to school - but different all at the same time! I miss the people and excitement that goes on on-campus!

Thinking we would have nothing else to do when we got home from work - we agreed to go to all the performances we could go to! but.... that didn't work out so well. We turned out to be just as or busier than when we were in school. Funny how that one turned out! But anywayz... we got to go to the last show for "She Stoops to Conquer." It was pretty good! I miss plays! Then we got to see part of the BFA show that goes on right before every graduation. People around here are talented.

I'm super excited for D to do his BFA show for Graphic Design... in less than a year! He always has crazy (cool) ideas running through his head!

Almost graduated!

I can't believe I'm all done with school (my undergraduate degree :)... just one more assignment to submit! It's been like the quickest 4 years of my life and I've absolutely loved it. The good things that have happened while I've been at BYU-Idaho outshines the unhappy moments. It's been a life-changing experience and I will never forget it.

Yesterday I went to my last class (auto maintenance!) and when I left I realized that's the first building that I had my first class in! I'm going to miss this school - but there's so much more to come because I was able to attend there!

AND.... I'm more than EXCITED for this weekend/next week! My family is coming!!!!

This week has been good so far! The semester is wrapping up and I'm getting ready for graduation, birthdays, our 1st anniversary, and seeing my family super fast because they can't stay in town long. I love my family; they're the best thing that has happened to me! (Yes, including my husband :)

I can't believe that it's almost 4 years since I came to Rexburg for school and now I am all done with classes. I remember getting ready for my first semester and feeling so nervous about being away from home leaving my little 7-month old sister behind. I was scared she would forget me.

 I miss BYU-Idaho ... it's one of my favorite places ever. The grounds are so beautiful and get more beautiful with time. There's just always something going on and it's exhilarating to know the person that just held the door open for you is going to go on and do great things! I miss campus!

Good thing we'll be sticking around until July 2014 when D puts out his BFA show in Graphic Design! So excited!

Have you ever had musubi? No? You should try it! I had never had it until D and I got married. My mom always told us to never buy spam because it was gross haha. He always talks about buying musubi in Hawaii all growing up. I thought it was weird they would sell some there! But anywho... all it is is spam, rice and seaweed. Easy!

Yields about 5 servings (2 rolls per person)

  • 1 cup rice
  • 2 cups water
  • 1 can of spam (keep the can)
  • 1 Tablespoon sugar
  • soy sauce
  • seaweed sheets

This is all you do:

1. Cook 1 cup of rice in 2 cups of water. 
2. Slice the spam, whatever thickness you want.
3. In a deep dish or bowl, mix some soy sauce with 1 Tablespoon of sugar.
4. Fry the spam until it's caramelized and cooked through, then set it on a plate with paper towels to absorb any grease.
5. The rice should be ready by now. lay down a sheet of seaweed and pack some rice into the spam can to mold it into shape and place it on one end of the seaweed.
6. Place a slice of spam on the rice and tightly roll. I like to wet my fingertips so the seaweed sticks.
7. Devour. Store in fridge if you have leftovers - they can be filling!

A productive week!

It's been a good week! I can't remember being at work. I got Thursday and Friday off and was able to spend lots of time improving our little home. The hubby and I made crafts, a chalkboard, babysat the cutest little girls, celebrated the 4th of July with the town in a parade, watched fireworks overlooking the valley with a more impressive lightning show put on by nature, and free time to sit down, relax and enjoy life with a glass cup full of lemon ice!

Yes, indeed, this has been a good week!

Independence Day!

It's the 4th of July! I like being in Rexburg for this day. People have a respect for the country here. D and I went to the parade on Main Street. All growing up we never went to parades... they were to easy to get lost in! It's small enough here that it's a nice, patriotic-community feeling. Afterward we kept to a tradition we started here... paletas! They're Mexican popsicles - way better than the ones you buy at the store. Real fruit and everything! Later we watched the fireworks from the top of the valley. We usually go to the Melaleuca fireworks show in Idaho Falls, but we thought we would change it up this year. It was nice and relaxing to sit in the car and hear each other: "Whoa, d'you see that... look!" There were just so many directions to look! The lightning was pretty impressive than the fireworks (or maybe more)!

It's July!

It still feels like it's April... except the weather! I miss spring, but all seasons have their own beauty. This is a little something from this spring (last weekend). Flowers are the best - they just grow and it's up to us to stop and look at 'em.
