RECIPE: PEACH PIE FILLING + TOPPING

Earlier this year, D had a talent show in his drawing class and they had a waffle breakfast and everyone was asked to bring a topping. This wonderful lady brought her peach topping and David brought home a baggie with some of it. IT WAS DELICIOUS! It's perfect on pancakes, waffles, bread, by itself, everything! I had to get this recipe so we asked and she was kind enough to share it with us.

I made sure to get lots of peaches this summer to can this deliciousness!

Peach Pie Filling + Topping
Ingredients
1 bottle of peaches in heavy syrup OR 4-5 peaches, peeled and sliced
3/4 cup water (if using fresh peaches)
3/4 cup sugar
6 tablespoons butter
1/2 teaspoon vanilla extract
3 Tablespoons of corn start or Clear Jel

Directions
1. Mix the dry ingredients.
2. In a pan, heat up the peach juice (or water if using fresh peaches) and butter until the butter melts.
3. Then slowly add the sugar-and-corn starch mixture and let cook until it's thickens and smooths out. Add the peaches and vanilla last. Cook longer if you want softer peaches.

To can them, I added a tablespoon or so of fresh lemon juice for freshness. I also used more peaches and added sugar to taste... peaches get sweeter when you cook them.

If you want a thinner consistency, go ahead and add a little bit of water until you get it where you want it! Serve warm over anything you want! Even ice cream!
